Vegan Tortilla Pizza Recipe


A tortilla pizza makes a lovely light lunch or dinner and it's perfect if you're looking for a healthier alternative to a regular pizza. We like keeping the toppings simple, but you can use whatever you have in your fridge! Serves 1 tortilla per person Ingredients 1 tortilla wrap

1-2 tbsp of tomato puree

Grated vegan cheese

Toppings of choice (e.g. vegan salami, tomatoes, fresh basil, mushrooms, onions, olives, pesto) 1/2 tsp of dried mixed herbs (if using)


Method

1. Place a baking tray in the oven and preheat to 180c fan.

2. Start by getting your tortilla and put 1-2tbsp of tomato puree on, or enough to cover an even layer.

3. Arrange your toppings so your tortilla is evenly covered, then add grated cheese to finish. 4. Add dried herbs if using. 5. Place in the oven for 5 minutes or until the cheese has melted and the tortilla sides are crispy. 6. Remove your tortilla pizza and add any additional toppings or olive oil to serve.
