Vegan Shortbread Recipe
This shortbread recipe is really easy to follow and requires basic ingredients, perfect when you want to make a sweet treat without taking up too much time! Ingredients (makes 15) 200g vegan unsalted butter 100g caster sugar 300g plain flour Method 1. Add the butter and sugar to a bowl and cream together. You can do this manually or by using a paddle attachment to a standing mixer. 2. Next, add the flour and beat until a dough is formed. It may look too crumbly at first but keep going with it and it'll all come together! 3. Sprinkle some flour on your work surface and roll out your shortbread dough to 1cm thick. 4. Cut your shortbread shapes, we used a round cutter, a size up from a regular scone. 5. Once your shortbread has been cut, place gently on a lined baking tray. 6. Pop these in the fridge for 30 minutes. This prevents the butter from being too soft. 7. Whilst they are chilling in the fridge, preheat your oven to 180C/160c fan. 8. Take out your shortbread and lightly sprinkle with caster sugar. 9. Bake in the oven for 15 minutes, or until lightly golden. 10. Once baked, leave to cool fully. You can get creative with this recipe, try dipping the baked shortbread in melted chocolate or top with fondant icing!
