Vegan NYC Style Cookies
These Vegan NYC Style Cookies are the ultimate comfort food treat, perfect during the colder months for cosying up on the sofa with a hot drink. We hope you enjoy!
Ingredients
15og vegan butter
100g soft light brown sugar
75g granulated sugar
250g plain flour
50g cornflour
1 1/2 tsp baking powder
2tbs plant milk (we use soy)
1/2 tsp salt
1tsp vanilla extract
300g vegan chocolate chunks
Method
1. Cream together the butter and both sugars until light and fluffy.
2. Add in all the remaining ingredients apart from the chocolate chips and mix until you get a cookie dough texture.
3. Add in the chocolate chunks and mix until evenly distributed.
4. Form 8 balls of dough, weighing roughly 120g each.
5. Place cookies onto a lined baking tray and put in the freezer for 30 minutes.
6. Heat the oven to 180 degrees Celsius.
7. Put the cookies in the oven for 14 - 16 minutes, making sure you don't have more than 4 cookies on each baking tray.
8. Remove from the oven and leave to cool on the trays.
9. Serve on their own or with a scoop of ice cream.
We love how versatile you can be with this recipe. In previous bakes, we've used 200g milk chocolate chunks and 100g of white chocolate chunks for an ultimate chocolate fix! You can try adding nuts or dried fruit too!
